Curried Pork Noodles

Curried Pork Noodles



This is a very basic recipe feel free to make it your own add different vegetables to the mix, substitute shrimp or chicken for the pork or even try adding all three. The key is not to over cook this dish. I recommend lower the salt content if you have problems with sodium. Hope you enjoy it and come back tomorrow for more ideas.
 
 

4 oz roast or barbecued pork sliced (ribs or tenderloin work best)

4 oz Rice Noodles (dry)

1 large onion

Heavy pinch salt

½ cup peas fresh or frozen

¼ cup vegetable stock or coconut milk for a sweeter taste

2 tsp soya sauce

2 tsp mild curry powder

2 Tbs cooking oil (peanut oil is best)

Soak rice noodles in hot (not boiling) water for twenty minutes and then drain well. Slice your onion into 8 pieces and separate the layers. Heat your oil in a wok (if you have one) or deep skillet, over high heat, Sautee your onions for approximately 1 min stirring constantly. Next add salt, curry powder and noodles and toss the mix to coat your noodles evenly. Quickly add soya, Vegetable stock (coconut milk) and peas. Stir lightly, cover and reduce heat to very low. Cook on very low heat for 3 minutes, then gently stir in your sliced pork and heat for 1 more minute. Serve and ENJOY.

COOKING TIME: Approximately 35 min.
