Salad Dressing

I’m not real
sure where this recipe originated. What you see above are the only notes I made
on the recipe card. This is unusual for me; by know you probable realize I’m an
information junkie and incessant note taker. What I can tell you is, this is a
wonderful dressing. It is just spicy enough to wake up your taste buds but not
so strong that it hides the natural flavors of your veggies. It works well on
many types of salads and also makes a nice marinade for lighter meats.
¼ cup Peanut Oil (Cold pressed is
best)
2 cloves Garlic crushed
1 Tbs Ginger grated fine
1 medium Red Chili chopped fine
3 Tbs Desiccated Coconut
2 Tbs Brown Rice Vinegar
½ cup water
Heat your
oil in a medium sized pan over a medium heat; add your ginger, garlic, chili
and coconut and stir fry for one minute. Slowly add your water and then your
vinegar stirring as you add. Allow to simmer 1-2 minute then sit your dressing
off to cool. Serve over your favorite salad or try it over lightly blanched Green
beans. Enjoy!
